Grilled grapefruit

Ingredients: Yields 4 servings

From the fresh produce market:
2 large pink grapefruit
A few mint leaves

From the cheesemarket:
2 tbsp. softened butter

From your larder:
4 tbsp. brown sugar
1/2 tsp. cinnamon powder
4 tbsp. rum
salt, pepper

• Cut the grapefruit in half.
• Mix together the other ingredients in a bowl and spread them over the grapefruit halves.
• Place under a very hot grill for 10 minutes until the surface turns golden and frothy.
• Place in individual serving bowls. Serve hot, decorated with a mint leaf.
