Pear with Roquefort milkshake

Ingredients: Yields 4 servings

From the fresh produce market:
2 Williams pears
60g walnuts

From the cheesemarket:
100g Roquefort
50cl milk

From the grocery store:
6 scoops of pear ice-cream

From your larder:
salt, pepper

• Peel and core the pears. Dice the pears.
• Crumble the Roquefort with a fork in a bowl.
• Chop the walnuts coarsely.
• Place the milk and pear ice-cream in a blender. Blitz for 5 seconds at medium speed. Add the Roquefort and pepper. Blitz at high speed for 30 to 45 seconds. Adjust the seasoning and blitz at medium speed for 5 to 10 seconds.
• Pour the milkshake into tall glasses. Decorate the glasses with the diced pear and crushed walnuts. Serve immediately.
