Variations on oysters

Ingredients: (yields 4 servings)

From the fishmonger’s:
36 oysters – shucked just before serving

From the fresh produce market:
Piece fresh ginger (2 cm)
2 shallots
Few sprigs chives
1 small dried chili pepper
Juice of 1 lime
1 lemongrass stalk
1 ripe mango

From your larder:
Black pepper
Olive oil

Oysters with fresh herbs:

Peel the shallots and chop finely. Finely chop the chives. Divide these ingredients among the oysters, then sprinkle with a few thin slivers of chili pepper, to taste.


‘Tropical’ oysters:

Zest the lime and chop the zest finely. Peel the lemongrass stalk and chop it finely. Peel and finely dice the mango. Divide these ingredients among the oysters and sprinkle with lime juice.


‘Asian’ oysters:

Chop the ginger finely. Chop the cilantro. Divide these 2 ingredients among the oysters, adding freshly ground black pepper and a few drops of olive oil.
