Small surprise bread from the hen coop

Ingredients: Yields 4 servings

From the butcher’s:
80g smoked bacon

From the cheesemarket:
4 eggs
250ml milk
4 knobs of butter
4 tbsp. single cream

From the baker’s:
4 bread rolls

From the fresh produce market:
A few sprigs of chives

From your larder:
4 tbsp. olive oil
salt, pepper


  • Prefer rolls that are 1 or 2 days old.  Cut the top off the rolls and remove most of the dough.
  • Place the rolls in a salad bowl, add the milk and the olive oil and let the rolls soak for 1 to 2 minutes.  Make sure that all the rolls have soaked up the liquid.
  • Preheat the oven to 200°C.
  • Butter 4 ramekins.
  • Drain and squeeze the rolls and place them in the ramekins so that they retain their shape.  Salt and pepper and place in the oven for 15 to 20 minutes.
  • Cut the bacon into fine strips, removing the rind.  Fry the strips for 5 minutes in a skillet.
  • Remove the ramekins from the over, break 1 egg into each roll, divide the bacon strips and the cream among the rolls, pepper and place back in the oven for 10 minutes.  Sprinkle with chopped chives and serve hot.
